Steak tacos with cilantro-radish salsa

The steak tacos with cilantro-radish salsa are delicious – but they require a lot of prep work for a tailgate. I recommend you make the salsa ahead of time to avoid all the preparation on game day.

Ingredients

  • 1 Tablespoon
    Vegetable or Olive Oil
  • 1 Pound
    Flank Steak (or Filet)
  • Kosher Salt
  • Freshly Ground Pepper
  • 1/2 Cup
    Fresh Cilantro Leaves with Tender Stems, divided
  • Radishes, trimmed, chopped
  • 2 Spring Onions or 4 Scallions, white and pale-green parts only, thinly sliced
  • Serrano Chile or Jalapeno, seeds removed, finely chopped
  • 2 Tablespoons
    Fresh Lime Juice
  • Corn Tortillas, warmed
  • 2 Ounces
    Queso Fresco or Cotija Cheese, crumbled

Instructions

  1. Season the steak with salt and pepper, then put on grill for about 5 minutes per side for medium rare. Let steak rest 5 minutes.

  2. For the salsa, chop half of cilantro and toss with radishes, onions, chile, lime juice and 1 tbs oil in a medium bowl.

  3. Season radish salsa with salt and pepper.

  4. Slice steak and serve on tortillas topped with radish salsa, cheese and remaining cilantro.
