Mountaineer Margarita

I love this low-cal, signature margarita, which I’ve dubbed Mountaineer Margarita. I highly recommend that you concoct it before you head to the tailgate because it takes time to make.

Since we leave for Morgantown on Friday mornings on game weekends, I make the simple syrup and then mix it with muddled blueberries and lime juice at home before we go.


Ingredients

  • 2 Cups
    blueberries (frozen work well)
  • 1 Cup
    fresh lime juice
  • 1 1/3 Cup
    simple syrup
  • tequila gold
  • kosher salt

Instructions

  1. Make the simple syrup first by adding 1 cup of agave to 1 cup of hot water. Stir until dissolved. Let cool completely before using.

  2. Muddle blueberries and fresh lime juice.

  3. Mix simple syrup with muddled blueberries and lime juice.

  4. Add tequila gold when you're ready to serve. Adjust the amount based on your preference (e.g., 1 shot per glass).
